I have been kicking around the idea of having a Mother’s Day party for a few years now. It seems like an easy fun way to get my mom, Nathan’s mom and our children together not to mention Nathan’s aunt and my Nana of course 🙂 So this is going to be our try out year!
It is always frustrating to me that in order to spend time together we end up going out to eat or some such thing that everybody else had the same idea to do. Then we spend the bulk of the time waiting to be seated and even after we are seated its really busy. I really want to slow down and get to hang out together this year.
So as a kick off this year and because what I want for Mother’s Day is a picnic with my kids we are headed to the Fort Worth Botanic Gardens which you can see how much I adore here.
As we are going to the Botanic Gardens decorations are unnecessary. So my primary focus is going to be on delicious food that travels well and getting to spend some much needed time together!
My favorite Chicken Salad just makes good sense! (for the recipe keep scrolling)

For dessert I have done something similar to this with brownies but I think that strawberry shortcake sounds like it is going to hit the spot!!!!
For our beverage I am going to keep it simple with some delicious strawberry lemonade and iced tea cause we like to keep it classy around here!!! OK OK OK it’s because I can’t take champagne into the Botanic Gardens!

Now for that Bangin Chicken Salad Recipe!
I like to have left over chicken hanging out in the fridge to whip this up on random Wed nights but if you are starting from scratch I season 2 to 3 chicken breasts (depending on their size) with pepper and seasoned salt then bake them for 30-40 minutes. Let them cool, then I chop them up and toss them in a bowl with the mayo, cranberries, and walnuts. Easy peasy and delicious on crackers, bread, croissants, lettuce leaf, apple slice basically anything.
2 chicken breasts
1/2 cup just mayo
1/4 cup chopped walnuts
1/4 cup dried cranberries
Roughly makes 4 sandwiches or a ton of “dip” to serve with crackers!
***optional trades or additions
*Halved grapes are fantastic in there in place of the cranberries or with them if you are anything like I am.
*Chopped apple is also a great addition.
*Other nuts are great if they are what you have on hand or prefer. (Pistachios for the win!) *pictured above with cashews cause I am ALL about using what you have on hand!
*If you have the time my favorite thing to do is to take the mayo and add in a tablespoon or so of tarragon and let it hang out in the fridge for a day or 2 before I throw all of the ingredients together AMAZING flavor!
*I have used a store bought rotisserie chicken more times than I can count!
